We are beyond excited to offer coffees again from our friends at Cafe Granja La Esperanza, and are thrilled to feature this Colombia variety as our third "FLASH-BREWED" sparkling coffee!

Producer Rigoberto Herrera of Cafe Granja La Esperanza has spent the last several years experimenting and pushing coffee innovation. At their five farms, he has  planted several varieties not typically found in Colombia. These include some of the earliest plantings of Geisha trees in among other non-indigenous varieties.

"Tres Dragones" (Three Dragons) is a special selection produced by the Herrera family at their oldest farm, Potosí.  This coffee gets its name from the three mechanical dryers on the estate, which look like three dragons when fired up.

This is our very first selection of "Colombia" variety from Cafe Granja La Esperanza.  When we visited their collection of farms in February, 2020, we were blown away by the clarity of flavours in this carefully processed lot.

Developed over five generations by Cenicafe between 1968 and 1982, the Colombia variety (Variedad Colombia) was the result of successful hybridization of Caturra with the Timor Hybrid. Colombia was developed in advance of Colombia’s first coffee leaf rust outbreak, which hit the country in 1983, and arguably helped saved the country’s coffee industry.

This variety has been improved over the years and has been the breeding base for different sub-varieties, including the Tabi and the Castillo cultivars.

At Cafe Granja La Esperanza, not only are they doing industry-leading work with famous cultivars like Geisha and Sudan Rume (count us in as their fans also!), but also with these cornerstone varieties that are so commercially important on a macro level.

We’ve brewed hot at 93°C and chilled immediately to 4°C using heat exchanger technology in order to optimally extract and immediately capture the best aromatics and flavour from this single origin coffee.
