Rosimeire, the producer of Sitio Vargem Grande farm, works closely with Lourdes Fatima’s farm Sitio Sao Pedro (which we have purchased from before) to learn about fermentation and how to create improved profiles for her coffees. Rosimeire is doing many different things with her coffees, experimenting with different fermentation techniques, and also drying coffee in both the traditional way on patio but also on raised beds.
Rosimeire used both mechanical and manual picking methods, and processed her coffee as natural with aerobic fermentation. This is a Red Catuai lot, where the cherries have been fermented without air contact for 80 hours and then were dried on the patio. During the fermentation process, Rosimeire monitored the cherries' sugar content (Brics), temperature, and PH.
As a result, this Red Catuai lot has bright acidity like red grape, with rich peanut butter creaminess and hazelnut notes. Please enjoy!
