Our coffees are roasted weekly and fulfilled after roasting to ensure optimal freshness and flavour. Cut-off for all orders is at 9am on Tuesday mornings. Orders completed after this time will be shipped the following week.

Rosimeire, the producer of Sitio Vargem Grande farm, works closely with Lourdes Fatima’s farm Sitio Sao Pedro (which we have purchased from before) to learn about fermentation and how to create improved profiles for her coffees. Rosimeire is doing many different things with her coffees, experimenting with different fermentation techniques, and also drying coffee in both the traditional way on patio but also on raised beds.
Rosimeire used both mechanical and manual picking methods, and processed her coffee as natural with aerobic fermentation. This is a red and yellow Catuai lot, where the cherries have been fermented without air contact for 80 hours and then dried on the patio. During the fermentation process, Rosimeire monitored the sugar content of the cherries (Brics), temperature and the PH.
As a result, this red and yellow Catuai lot has excellent bright acidity, like raspberry and pineapple, with smooth milk chocolate aftertaste. Please enjoy!
