This splendid coffee from El Salvador is mellow, and definitely an easy-drinking coffee with low acidity and great body. Jose Antonio Salavierra and his two sons, Andres Salaverria and Jose Antonio Salaverria Junior, are now the 6th generation of coffee producers and are working hard to improve the quality of El Salvadorian coffees. Leaf rust has been one of the major challenges for farmers in El Salvador the last years. Many producers are now giving up and are abandoning their farms. The Salaverrias have worked the last 8 years to regenerate the soil through usage of Huisil (organic compost/fertilizer) as a soil regenerator.
In the cup, you'll find lots of dark chocolate and sweet brown sugar, with hints of caramel, and possibly a pecan or two. Just like a chocolate chip cookie!
