We are very proud to feature someone "close to home" for us, and someone whose coffee journey is really just about to take off.

Bosco Tai is the 2020 Hong Kong Barista Champion, and was scheduled to compete in the World Barista Championships in May of 2020, which has since been deferred due to the COVID-19 pandemic.  We are big fans of Bosco's, and have previously spoken with him on several occasions following his win on how we could support him in his journey as an independent competitor to the world's biggest coffee stage.  We learned about his journey in coffee so far, and were inspired to have him choose two coffees for our ICONS program.

Bosco got his start in coffee as an espresso machine technician ten years ago, and seeing on a daily basis the wide range of different standards (or lack of!) coffee bars had in brewing coffee inspired him look for internationally-accredited barista courses and certifications, in order to increase the quality of the coffees served at his customers' cafes.  While amassing no fewer than 12 individual certifications over a three year period, Bosco took on a new role as a full-time SCAE program instructor in Hong Kong, becoming one of the head trainers at a local coffee campus.

Throughout this process, Bosco had also participated in the Hong Kong Barista Championships, placing as high as Third twice (in 2014 and 2016) before finally winning this year.  

Bosco's two selections for us this year come from Brazil, and for the first time in our subscription program, we will be sharing ratios and brewing guides specifically for espresso brewing.  Bosco's intent with these two coffees is to take coffees from a specific region that is historically well represented in espresso blends, but to select examples that are non-traditional.

To make his vision a reality, we worked with Nordic Approach to find two lots of coffee produced by a second-generation coffee producing family in the Mantiqueira Mountains region of Minas Gerais. 

Rosemeire and her husband, Carlos, grew up in coffee producing families and practically inherited their knowledge and passion for coffee. Carlos is the son of another producer we buy coffee from, Lourdes Fatima (Sitio Sao Pedro), and his brother is helping both Carlos and their mother experiment with processing.

Sitio Vargem Grande became their farm in 2009, when they got married, it was chosen because the land is between 1,100 and 1,400 meters above sea level which is a great altitude for coffee in Brazil. They are growing red and yellow Catuai on the 3 ha farm, that they planted in 2010.

Rosemeire process her coffee as a natural with aerobic fermentation. The coffee here is processed as a Natural, which means the whole cherries are dried. However in the case of the lots we bought from Rosemeire there was cherry fermentation before drying. This is when the cherries are picked and kept for some hours before starting the drying process, in this case the cherry where fermented for 72 hours in boxes, under water before being dried.

During the fermentation process they are monitoring the sugar content of the cherries (Brics), it went from 24 to 12. The temperature, which should not exceed 38 degrees, and the PH, the final PH was 4.

Bosco chose two different lots of yellow Catuai, one that is fruity and creamy - possibly ideal in a small competition-sized milk beverage, and the other which is floral and sugary - perfect as a single origin espresso.

Rosimeire is a producer we bean to work with this year, her farm Sition Vargem is located near Lourdes Fatima’s farm Sitio Sao Pedro.  Rosimeire is married to one of Lourdes sons,so she is working with Lourdes and the youngest of the sons, Tiago, to learn about fermentation and how to create improved profiles for her coffees. Rosimeire is drying coffee in the traditional way on patio but also on raised beds.

This coffee from Sition Vargem is bright and juicy with red fruit and mild grapefruit like acidity.
