This lot was dried by both shade and sun. The average drying days is 31 days. The cherries stayed on the drying beds for 5 days without touching or moving. Day 5 onwards, the cherries were turned 4 to 6 times per day depending on the environment by gradually increasing the thickness of the coffee. The cherries under shade to slow down the drying and obtain a uniform moisture content at the end.
