Our coffees are roasted weekly and fulfilled after roasting to ensure optimal freshness and flavour.  Cut-off for all orders is at 9am on Tuesday mornings.  Orders completed after this time will be shipped the following week.

Even though they are still a “young” coffee estate, Gesha Village has become synonymous with quality coffee from the birthplace of specialty coffee: Ethiopia. Now into their sixth year of harvest, Adam and Rachel Overton have moved into more experimental processing methods. This lot, E-31, is one of their experimental lots.

 

One of the new steps taken in the processing of this lot was underground fermentation in clean, odorless sacks which were not completely sealed – allowing a very slow fermentation in a cold environment. The cherries were fermented for three nights before being dried. Drying happened in three stages on drying beds: five days without agitation at 1-2cm bed depth, then for the next ten days the cherries were turned four to six times per day with a 3cm depth, then fifteen days with turning eight times per day at a depth of 5cm.

 

This rigorous experimental method has resulted in a unique flavor profile that combines the floral aromatics and stone fruit characters we normally associate with Gesha Village lots, while adding a deeper blueberry complexity that we attribute to the fermentation and drying process. Please enjoy!
