Rigoberto Herrera’s Cafe Granja La Esperanza as one of our longest relationship-based coffee producers. He continues the work started by his parents, in introducing and fostering the growth of non-traditional coffee varieties in Colombia, like the Sudan Rume which originates from modern-day South Sudan, bordering Ethiopia.

There aren’t many estates that segregate Sudan Rume by itself, but at their farm Las Margaritas, Café Granja has four hectares dedicated to this flavourful variety. Sudan Rume occupies the highest section of the farm. There, it benefits from slower maturation of the cherries to build up more sugars and flavours at this higher elevation, where there is a greater temperature difference between the coldest time of night and the hottest time of day.

The carefully hand-picked cherries are first pre-fermented in Granja’s stainless steel fermentation tanks for around 30 hours, with the temperature controlled so it never exceeds 30°C. This allows time for complexity and wild flavour characteristics to build within the coffee, including fragrant floral aromas, red grape sweetness, and an elegant raspberry-like acidity. Please enjoy!
